Foods that I eat in my journey to a plant-based diet

If you’re vegetarian, Indian cuisine will be your best friend. However, it is difficult for vegans especially when they love to use yoghurt in their cooking!

I made Nasi Goreng Indonesian style with the vegetarian seaweed crunch for flavour and spiciness and oh boy, it tasted beautiful!

This is my Green Curry noodles without the coconut milk (I didn’t have enough money to get one haha), but I love the taste and erm ya, I put too much of cayenne pepper. It’s spicier than you think xD

Went to Nando’s with mom and got a veggie burger instead! I requested for no yoghurt but I checked and I believed they didn’t follow my request. Pfft. Anyway, ate it all up.

This is my favourite go-to Vegan Ban Mian at the Kopitiam (hawker centre) near my house because it tastes so good! I love the seaweed seasoning added into the noodles and how satisfying I feel after I’ve gobbled everything up!

Decided to try “tuna” chickpeas and man, I really should make it in bulks and keep ’em in the fridge so that I can eat it whenever I want! It will be nice if there’s vegan mayo, tho!

So far it’s been okay-ish until yesterday, I faced difficulties getting vegan food when I met mom for dinner. The place that we went is a Chinese-Muslim restaurant BUT THERE WERE NO VEGAN OPTIONS! And it pissed me off because all of the vegetarian dishes are mixed with either shrimp paste, fish sauce or salted egg. I was so stressed, I ended up getting Hotplate Beancurd. I asked if there’s meat and the waitress said yes. So I requested without chicken and she said, “vegetarian ah?” and I said ya.

Guess what?

It was served with prawns and fish cakes. I was really frustrated. How can you even say it is vegetarian when there was seafood? It’s stupid because most vegetarians in Singapore are not only Indians but Chinese, yet, how can you even think prawns and fish cakes are vegetarian?

I was really infuriated.

So instead, I gave them to mom and just gobble everything up, despite realising there must be oyster sauce in the gravy.

Well, I tried my best.

But…

I would be lying if I said I wasn’t disappointed. Everything went perfectly well the past few days but meh.

I guess this is one of the struggles I have to face in my journey to a plant-based diet…

My Daily Life., Plant-Based

Thinking of transitioning…

I’ve always had interest in vegetarianism and veganism.

I’ve tried the pescetarian diet for 3 -4months.

I’ve tried the vegetarian diet for 1 month during last yr’s Ramadhan if I’m not wrong.

And I love to have lunch/dinner with my girlfriends at vegan cafes/restaurants.

Now I’m in the middle of watching the documentary called, “What The Health”.

Knowing that boyfriend, a meat-lover, starts to get interested in veganism after watching That Vegan Couple’s reaction video to Shane Dawson, motivates me to be more plant-based.

Anyway, eating plant-based meals have definitely helped my asthma so… I might as well stick to it as much as I can!

And I will probably bring food from home? Or order some rice with veggies from the canteen in school next week when school starts again?

My snacks have always been vegan anyway so, no excuse to eat vegan in school, no?

But it will be difficult when I do go out with families and friends…

I’ll see if there are veg-options, and if there isn’t, I will stick to having fish or eggs. That would be my last resort.

Anyone of you a beginner in being plant-based?

Asthma symptoms getting worse?

I have a feeling that it’s mainly due to my diet since I ate a lot of instant noodles the past week along with cold drinks since orientation 3 weeks ago!

I kinda panicked when I get shortness of breath, having to use a rescue inhaler, ventolin, 2x a day!

Until I remember… MANUKA HONEY! I have more than 1kg worth of Manuka Honey in my pantry and I’ve been lazy to take it ever since my symptoms have improved.

Shouldn’t have done that!

So now, I’m going to prepare myself a pretty hot Manuka honey drink for school later, and maybe I will be bringing that from today onwards!

21 JULY 2017 is probably the best day of my life so far.

I’ve never gotten gifts for anniversaries before during my past relationships, hence, when I do receive surprise gifts here and there, I would always be genuinely blessed and grateful.

2 days ago, I was doing my revision before work and there was a delivery man right outside my door.

I thought it was my calculator but he said, “Flowers?”
😍😍😍😍😍 The bouquet is so beautiful and omg the ballllooooonnnnn 😍😍😍😍😍❤️❤️❤️❤️😱😱😱😱😱
What a lovely surprise!

After I came back from work, I saw 2 tins of Lemon Chamomile from boyfriend because chamomile tea is good for asthma and he knows that I love tea!
I’m so so grateful to have such an amazing man who respects and values me as a woman, and loving me unconditionally.

Thank you, love! xo

Nightmare -> Anniversary

So I woke up from a nightmare (I guess?) and my head hurts ever since.

My heart was beating so fast, I had to calm myself down a bit before entering the washroom.

I dreamt that i had to be in a machine and somehow something hooked at the bottom of the machine to carry us up to a tower…

So can you imagine? We were basically being dragged up in the air by the bottom of our machine, and we were literally hanging upside down.

And then when the loop at the sides have to be hooked onto the tower, the announcement said, "You can close your eyes and you won't fell so scared."

After a while, everything was still and I heard someone guiding us out.

I opened my eyes and I saw that we were already in the restaurant's balcony and mannnn…

The view was beautiful!

It was so high up in the sky, it's the same level as the fluffy clouds!

I looked at the spread of the buffet and it looked definitely scrumptious.

But I woke up with my heart beating so fast because it still wouldn't stop despite reaching the restaurant safely.

And then when I wanted to update Boyfriend about it, I realised today is our 1st year anniversary!

He had a long text with a video to wish me Happy 1st Anniversary! ❤️🌸

I planned to make a wish but I fall asleep instead 😕

Anyway, I'm so blessed to know that we manage to pull through for 12months. Long distance relationship can take a toll on us but our love is so bold, we manage to overcome certain challenges coolly.

Thank You, God, for guiding us through and never forgetting our relationship 🙏🏼🌸❤️

Mental Health, My Daily Life., Teaching., Uni Life.

I am competitive.

I may look like I don’t care

I may keep quiet as friends start to compare marks with each other

It’s not because I can’t be bothered,

But, I just wish to leave that course as soon as possible.

It was never my passion to be a Food Technologist.

However, when I started entering uni

Not only did I become organised but I’ve been trying my best to be as efficient as I can be

Studying daily, something that I’ve never done in my whole entire life before this

Making sure I score at least a Distinction for tasks and assignments

Giving my all in all school work.

I am competitive.

Because what I’m doing now is my passion

And studying for me now is both a want and a need.
